HOW TO TELL WHAT ANGLE YOUR KNIFE IS STROPPED TO? Marker pen trick, stacking coins, or cutting a small wedges of wood at specific angles and laying them on the leather strop. Color the bevel of the knife with marker pen . One pass down the bevel on each side should be enough to cover it, make sure you coat the bevel from the tip all the way to the primary grind, or the shoulder. Draw the knife across the leather strop with light pressure. The goal is not to polish, yet, but to remove only the marker pen markings to indicate which angle. After 2-3 strokes per side inspect you bevel and the mark pen markings. If the marker pen trick is worn away on the upper portion of the bevel you are stropping too flat (ie, stropping at 15 degrees and the knife may have a 20 degree angle). If you are only making contact at the cutting edge you are stropping too steep (ie, stropping at 20 degrees and the angle of the knife is 15 degrees). Adjust the angle to accommodate your knife and make a few more strokes per side. This may take 2-3 adjustments before getting close enough to feel confident stropping your knife. Kitchen knives use finer angles for slicing and detailed trimming, usually between 15 and 18 degrees. Pocket knives are usually between 17 and 25 degrees making them a bit more sturdy and holding up to a day’s work. Outdoor camping and bush crafting blades are usually 25 to 35 degrees.
